Greetings From Limited Limitless Living!

“The name April stems from the Latin word “aperire”, which means to open… the opening of new opportunities along with the changing blossoming of nature. Let there be Spring! “---- Grizel Ubarry

In these unsure times, it’s always good to find inspiration in the changing seasons …what better than Spring. I like to believe that there are always new chapters for us to start as we age and become wiser. For now, my advice is to turn off the noise and focus on what is best for you.

At the moment, I am now living in the Puerta Vallarta region of Mexico having left Costa Rica. I have undergone the stem cell treatment as planned with hope that the next couple of months my pain will lessen, although there are no guarantees. Watching the news and the stock market I decided to take a leap and purchase a condo in Bucerias,Nayarit, part of the Puerta Vallarta region. Frankly, by the time I get back to the US in 2026, I am not at all optimistic about buying anything in New Jersey. I plan to stay a bit longer in Bucerias to finalize the closing and get the property ready for renting. More on this next month.

This month’s newsletter I have two stories to share about my time In Quito. The first is on what three weeks in Quito was like. A country I knew nothing about, yet pleased to have been there. The second story is on “Quito’s Carnaval” week. Quite different than what I had expected, leaving in me, a greater desire in learning more about the preservation of traditions and customs in a rapidly changing world.

This month’s missed stories are pretty much a repeat of last month stories in case you miss any. On our Art Lovers section, the next two months there will be quite a number of art fairs happening both in New York City and throughout the US. None of which I will be able to attend. Also, this month we added a recipe as part of our Eating Voraciously section on how to make ceviche from a cooking class I recently took in Costa Rica.

Hoping you enjoyed the Easter and Passover holiday and the Spring Break with your loved ones.

As always, your help in introducing the newsletter to others is deeply appreciated. Let me know if you would like to meet or do a zoom chat. Below is my scheduling link so we can avoid the back and forth of finding a mutual convenient time. Looking forward to connecting with you soon.🐇🥚🎪🌷

Feature Stories

25 Days in Quito: A Visual Diary of Culture, Color & Cuisine

I spent 25 days in Quito, Ecuador, known as the first UNESCO world culture heritage site. It is 9,350 feet above sea level (at times, feeling a bit breathless). Quito is nestled deep into a valley surrounded by Andean mountains and volcanoes. One of the most biodiversity regions in the world. Its historic center was built on what was once part of the Inca civilization with some of the most well-preserved colonial architecture in all South America, steeped in old traditions. It is also a very large and densely populated modern city. Three weeks in Quito and five days in the Galapagos islands made for an unforgettable experience is this part of the world. Here is what I manage to do in Quito, also known as “La Mitad del Mundo” (middle of the world) where the equator meets Ecuador…

Faces of "Carnaval": A Visual Story from the Heart of Ecuador

During my time in Quito, Ecuador, I attended "Carnaval "(quite different from what I expected). First, carnavals in all Ecuador are rooted among the Huarangas natives which over time got mixed in with Christian beliefs brought on by the Spanish colonizers. Each city celebrates "carnaval" a bit differently where traditionally people throw at each other flowers, water, flour or foam during the festivities in honor of the second moon. The city closes down for several days, gradually opening up after Ash Wednesday, embracing a long tradition that symbolizes renewal and happiness. Quite the experience…

In Case You Missed It

My PhotoGrAphy of the Month

Part of the joy of travel is my passion for photography seeking to capture the daily lives of the people and the places that I visit. We will post monthly our favorites. If interested in any of our photos, visit the Photo Print Gallery, Click Here.

Signs of Spring

There is nothing quite like buying a new dress, or dresses for the upcoming spring and summer events. Make your purchases soon, as tariffs may soon impact your preferred clothing store. Over 97% of the apparel and shoes purchased in the United States are imported from other countries, with a significant portion from Asia.  Sound shocking but true according to the American Apparel & Footwear Association. But I just got to have that dress!

Today's Thought and Inspiration⛅

As I travel, I often wonder how much of this world will remain the same. How

much of what exist today may be severely impacted by climate change, the way countries governed and the probability of more wars. I truly understand why the birth rate among most populations are declining and the anger young people are feeling about the direction many countries are following. Indeed, it is a scary future and one that requires change.

We all know that change is inevitable and that our time here on this earth is

short. More reason to be both purposeful and determined. I leave you with

this quote by Michael J Fox who was diagnose with Parkinsons, now in his 60s having raised over 2 billion seeking a cure for this disease with many significant advancements already made.

“Acceptance doesn’t mean resignation; it means understanding that something is what it is and that there’s got to be a way through it.”

- Michael J. Fox

Eating Voraciously

Costa Rican Ceviche

Ceviche is a very popular dish in all Latin America. During my stay in Costa Rica, I attended a cooking class which included the making of Ceviche alone with “Patacones” (fried Plantains) known as “Tostones” among Puerto Ricans. Ceviche plays an essential role in both Costa Rican cuisine and culture served for lunch or as an appetizer, part of a country’s long tradition. This dish can be served with corvina (sea bass) or tilapia mixed with cilantro, onions, bell peppers and lime.

The magic of Ceviche is it does not require any heat as the lime actually cooks the fish. A typical serving (about 1 cup) contains roughly 150 to 200 calories, with hardly any carbs. If you like to try serving this easy dish click below for the recipe. Remember cooking classes offer the unique opportunity to visit a small restaurant or the home of a local resident to explore traditional culture and cuisine when traveling.

Exploring Your Wanderlust

Thinking about planning a trip to New York City between April 19 – June 17?

If so, you may want to catch artist Thomas J. Price 12 feet massive bronze sculpture of a black woman towering over New York’s Times Square. Best part, for the month of May (near midnight) at 11:57 PM all the Time Square billboards will have a stop-motion animation show orchestrated by the artist. A great time to visit the city!

Thomas J Price’s Grounded in the Stars will be on view in Times Square at Broadway and 46th Street, April 29–June 17. The animated show will be shown nightly May 1–31.

Art Gallery

We are excited to partner with Arterial Galeria De Arte to offer the opportunity to purchase artwork from contemporary artists from Mexico. Every month we will spotlight artwork from an artist. This month we are spotlighting Isidro Fabian.

“May, the month of maybes.” ----- Unknown It’s hard to believe that we are so close to the middle of the year and that summer in just around the corner. There are many “Maybes “of what to plan this summer before it passes us so quickly (warning--plan ahead). One notable aspect of May is witnessing a new crop of young people graduating.
